Kırmızı Lahana Turşusu Tarifi
Malzemeler
1 büyük al lahana veya 2 küçük boy
1 büyük çay bardağı üzüm sirkesi
3 büyük çay bardağı su
1 litrelik ve yarım litrelik cam kavanoz
1 aş kaşığı iri turşuluk, kaya tuzu
1 büyük çay bardağı elma sirkesi
Yapılışı: Lahanayı ince ince kesip 1 aş kaşığı tuz ile rengi dönüp biraz yumuşayıncaya kadar elimizle harmanlayıp kavanozlara sıkıca dolduralım üzeri için sirkeler, su ile birlikte karıştırılır. Kavanozlara doldurup ağızlarını sıkıca kapatıp dolapta 2 gün bekletip afiyetle yiyebilirsiniz.
Mor Lahana Turşusu Tarifi
Malzemeler
1 adet mor lahana
2 aş kaşığı kaya tuzu
1 tatlı kaşığı limon tuzu
1 çay bardağı üzüm sirkesi
Yapılışı: Lahanaları şerit şeklinde doğrayın.Kestiğiniz lahanaları 1 aş kaşığı kaya tuzu ile 5 dakika ovun.. Lahanaların rengi açılıp yumuşayacaktır.10 dakika daha bekletilerek iyice yumuşaması sağlanır. Kavanozun büyüklüğüne göre 1-2 kavanoza sıkıştırılarak doldurulur. Sonrasında 1 çay bardağı sirke, 1 çay bardağı su olacak şekilde kavanoz dolana kadar sırasıyla eklenir. 1 kaşık kaya tuzu, 1 tatlı kaşığı limon tuzu eklenerek kapak sıkıca kapatılır. Serin bir yerde 4-5 gün bekletilir. Açıldıktan sonra buzdolabında muhafaza edilmeli.
Beyaz Lahana Turşusu Tarifi
Malzemeler
1 adet orta boy ak lahana
1 su bardağı ak sirke
1 su bardağı limon suyu
1/2 su bardağı kaya tuzu
1 avuç nohut
2 adet limon (dilimlenmiş)
1 adet cam kavanoz
Yeteri kadar su (dinlenmiş)
1 çay bardağı limon tuzu
9-10 diş sarımsak
Yapılışı: Bir kasede sirkeyi, kaya tuzunu, limon tuzunu ve limon suyunu katıp eriyene kadar iyicene karıştırıyoruz. Lahanaları ince ince doğruyoruz, kavanozun içine koyup erittiğimiz malzemeleri lahanaların üzerine döküyoruz. Ardından dinlenmiş suyla kavanoz tamamen dolacak şekilde suyunu tamamlıyoruz. Sarımsakları, nohutu ve dilimlenmiş limonları kavanozun arasına serpiştiriyoruz. Kavanozun kapağını sıkıca kapatıyoruz. Karanlık bir yerde 10 gün kadar bekletiyoruz.
