Dünyaca ünlü lahmacunu bir de Gaziantep’te yiyin. Domates, acı yeşil biber, bolca maydanoz yaprağı ve taze sarımsak, etle birlikte zırhta çekilir ve ince açılmış hamurun üzerine yayılarak taş fırında pişirilir.
Gelelim Gaziantep’in Ünlüsü olan Lahmacun’un tarifine;
Malzemeler;
750 gr orta yağlı iri kıyma et
150 gr kuyruk yağı
1’er yemek kaşığı dolusu domates ve biber salçası
1 demet maydanoz
3 baş sarımsak
6-7 adet kırmızı taze biber
2 adet yeşil biber
2 domates
1 yemek kaşığı isot, pul biber
1 tatlı kaşığı karabiber, kimyon
Yapımı;
-Maydanozlar yaprak yaprak ayırılır. Sarımsaklar temizlenir, biberlerin çekirdekleri çıkarılır.
-Temizleme işi bittikten sonra bütün malzemeler zırkla doğranır veya robotta kıyma halini alıncaya kadar çekilir, içine kıyması da konarak iyice karıştırılır ve bir harç elde edilir.
-Hazırlanan harç pide fırınında fırıncı tarafından pide hamuru ile lahmacunlar yapılarak pişirilir.
Not: Malzemelerin zırkla kıyma haline gelmesi isteğe göre baharat konması ve meşe odunu ile taş fırında pişirilmesi lezzet açısından önemlidir.
