Şiveydiz (Gaziantep Mutfağı) Tarifi İçin Malzemeler
200 gr kuşbaşı et
250 gr süzülmüş yoğurt
Yarım su bardağından biraz fazla nohut
1 yumurta
Yarım çorba kaşığı un
1 bağ taze sarımsak

1 yemek kaşığı nane, zeytinyağı

Suya ıslanarak yumuşamış nohutları kuşbaşı et ile birlikte düdüklüye atıp pişirin, ben 50 dk da pişiriyorum siz de düdüklünüzün pişirme süresine göre ayarlayabilirsiniz.
Soğan ve sarımsaklar 2 – 3 cm kalınlığında doğranır. Tencerede 15 dk yumuşayıncaya kadar pişirilir. Nohut ve et pişince bir tencereye süzme yoğurt konur ve üzerine et suyu yavaş yavaş eklenir. Yoğurdun kesilmemesi için kısık ateşte sürekli aynı yöne yavaş yavaş karıştırmanız gerekmektedir. Yoğurt ve suyu karıştırdıktan sonra içine 1 yumurta kırın ve yarım çorba kaşığı unu ekleyerek karıştırmaya devam edin. Bu işlem de yoğurdunuzun kesilmesini önleyecektir.
Gene her ihtimale karşı pütür pütür olduysa ben size mikserde karışımı pürüzsüzleştirmenizi tavsiye ederim. Ardından tencereye pişen et ve nohutları ve başka tencerede pişen soğan sarımsakları ekleyin. Unun da etkisiyle yemeğin suyu biraz koyulaşacaktır. Yemeğin tuzunu ekleyin. Konulan malzemeler zaten piştiği için eklediğiniz tencerede 5 10 dk pişirmeniz yeterli olacaktır.
Son olarak yemeğin altını kapatın ve bir küçük tavada göz kararı zeytinyağı kızdırın bir kepçeye nane koyun ve tencerenin üzerinde tutun, kızan zeytinyağını kepçenin içindeki nanenin üzerine dökün ve kepçeyi yemeğin üzerine boşaltın. Kepçeyle iki karıştırıp yağın homojen olmasını sağlayın. Bu arada yoğurtlu yemeğinizin ağzını kesinlikle kapatmayın çünkü yoğurt kesilir ve ekşime yapar. Hepinize Afiyet Olsun.
