Gaziantep’in usulü yoğurtlu patates tarifi nasıl yapılır.? Yoğurtlu Patates sulusu için Malzemeleri nelerdir.? Malzemeler 5-6 tane orta boy patates 500 g kuşbaşı et 1/2 bardak nohut 1 küçük soğan 1,5 tatlı kaşığı tuz 6-7 bardak su 3 kâse (bardak) süzme yoğurt 1 adet yumurta 2 yemek kaşığı tereyağı veya zeytinyağı 1 yemek kaşığı haspir 1/2 tatlı kaşığı karabiber
Nasıl Yapılır
Nohudu ayıklayın ve bir gece önceden ıslatın. Eti iyice yıkayıp süzün ve bir tencerede 6-7 bardak su ve tuz ile kaynamaya koyun. Kaynamaya başlayınca suyun yüzeyinde oluşan köpükleri etin suyuna karıştırmadan kevgirle toplayıp alın. Patatesleri soyup doğrayın ve suda bekletin. Soğanı ince doğrayın. Etin üzerine nohudu, soğanı ve tuzu ekleyin, et ile nohut iyice yumuşayıncaya kadar pişirin. Et pişince patateslerin suyunu süzüp tencereye ekleyin ve 25-30 dakika kadar pişirin. Yoğurdu yumurta ile pürüzsüz olana kadar karıştırın. İsterseniz 1-2 yemek kaşığı zeytinyağı da ekleyebilirsiniz. Kısık ateşte sürekli aynı yöne doğru karıştırarak ısıtın. Yoğurdu ısıtırken içine azar azar yemeğin pişme suyundan ilâve edin ve iyice ısınıp kabarmaya başlayınca karıştırarak yemeğe ekleyin. Karıştırmaya devam ederek bir iki taşım kaynatın ve altını kapatın. Tereyağı veya zeytinyağını küçük bir tavada kızdırın. Patatesin üstüne haspir ve karabiberi ekin, kızgın yağı gezdirerek servis yapın.
