TENE KATMASI MALZEMELER
İç Katması için gereken malzemeler 2 su bardağı ince pilavlık bulgur
2 su bardağı kaynar su
1 yemek kaşığı dolusu domates salçası
1 yemek kaşığı dolusu biber salçası
Yarım çay bardağı limon suyu
isteğe göre nar ekşisi
1 su bardağı zeytinyağı
1 yemek kaşığı tuz
1 fiske karabiber
1 soğan (yarısı içine, yarısı 1 bardak zeytinyağında kavrulacak)
TENE KATMASI TARİFİ
2 bardak pilavlık bulgur derin bir kabın içerisine alınır üzerine 2 bardak kaynar su konulur ağzı kapatılır. Bulgur şişene kadar bekletilir. (yaklaşık 10 dk)
İçerisine salçalar, tuz, karabiber eklenir. 1 soğan ince ince doğranır. Yarısı bulgurlu karışımın içerisine konulur. Elimizi suya batırıp iyice (çiğ köfte gibi) yoğurulur.
Soğanın diğer yarısı tavada 1 bardak zeytinyağında pembeleşinceye kadar kavrulur.
Kavrulan soğan da yağ ile birlikte harcın içerisine eklenir. İçerisine yarım çay bardağı limon suyu ile 2 su bardağı soğuk su katılarak cıvıtılır. Tabaklara servis edilir üzerine biraz zeytinyağında pul biber karıştırılarak süslenir.
İstenilirse su ve limonu katmadan bir kısmı köfte olarak sıkılır.Haşlanmış lahana yaprağı veya asma yaprağının içerisine koyularak yenilir.
