Gaziantep Mutfağı Hakkında Bilgiler
Yaklaşık 250 özgün çeşidin bulunduğu Gaziantep mutfağı, et ağırlıklı olduğu bir mutfaktır. Daha çok koyun eti tüketilir. Gaziantep Mutfağın başlıca özelliği çok sayıda kebap çeşidini bir arada barındırmasıdır. Öte yandan Gaziantep yemek kültürünü yalnızca kebaptan ibaret sanmak büyük bir hata olur. Nitekim Gaziantep, sebze ve meyvelerin de kullanıldığı; dahası baharat ve yoğurdun büyük bir rol oynadığı bir mutfak geleneğine sahiptir. Yemekler bölgeye özgü bir gelenekle bol yağlı yapılır ve yağın yemeğin lezzetini etkileyen önemli bir unsur olduğu düşünülür. Salça ve salçanın kalitesi de Gaziantepliler için büyük önem taşır. Nar ekşisi gibi soslar tariflerde bolca kullanılır. Bulgur, pek çok yemeğin etten sonraki en önemli malzemesi olarak bilinir. Patlıcan, kabak, biber, acur gibi kurutulmuş sebzeler ve bunlarla yapılan dolmalar Gaziantep mutfağının önemli öğelerinden sadece birisidir. Başta lahmacun olmak üzere hamur işleri de Gaziantep sofralarının vazgeçilmez lezzetidir.
