Gaziantep yöresine özgü çok lezzetli bir o kadarda yapımı zaman alan bir yemektir.Gaziantep usulü Ekşili Ufak Köfte (Ekşili Yuvalama) nasıl yapılır? Malzemeler Yarım soğan 1 diş sarımsak 1 dolu yemek kaşığı domates salçası 300 gram parça et 2 yemek kaşığı tereyağ+biraz sıvı yağ 2. 5 – 3 su brd önceden ıslatılmış nohut Tuz-pul biber Su Köfte için:
1. 5 su bardağı ince bulgur Yarım soğan 1 dolu yemek kaşığı domates salçası 1 yumurta Yarım su bardağı un Tuz Üzeri için
Zeytin yağı Kuru nane Limon suyu veya limon tuzu Antep Ekşili Yuvalama (Ekşili Köfte) Tarifi Yapılışı
Et yeteri kadar yağda kavrulur. Soğan eklenir kavrulur salça kokusu çıkana kadar kavrulur. Nohut ve sarımsak ilave edilir biraz kavrulur yeteri kadar su eklenir tuz ve pul biberi ayarlanır, düdüklü tencerede nohutla pişirilir.
Köfte için: bulgu ılık su ile ıslatılır. 10-15 dk bekletilir. Yumuşayan bulgura yumurta soğan un salça tuz eklenir. Yapılan hamurdan nohuttan büyük toplar yapılır.
Ufak kasede su bulundurulur. Hamur elimize yapışmasın diye elimizi ara ara suya batırıyoruz köftelerin birbirlerine yapışmaması için un serpilmiş tepsiye dizilir. Pişen nohutların içine köfteler atılır. Köfteler kaynatılarak pişirilir. Pişen çorbaya zeytin yağda kavrulmuş nane ve limon suyu dökülür.
