Antep Usulü Yaprak Sarma Tarifi; Malzemeler
İç Harcı İçin:
1 büyük kase dolmalık pirinç 2 adet kuru soğan 3 diş sarımsak 1 adet domates 1 tutam maydanoz 1 yemek kaşığı domates salçası yarım yemek kaşığı biber salçası 1 tatlı kaşığı tuz, pulbiber, karabiber, kimyon, 1 tatlı kaşığı sumak 1 yemek kaşığı nar ekşisi zeytinyağı ya da sıvı yağ
Üzeri İçin:
1 adet limon 1 yemek kaşığı nar ekşisi 1 tatlı kaşığı tuz 1 çay bardağı zeytinyağı su Yaprak Sarma Yapılışı Asma yapraklarımız tuzda basılmış ise öncelikle tuzundan arındıralım. İç harı için pirinçleri yıkayalım. Domates kuru soğan ve sarımsağı rendeleyelim. Maydanozu ince kıyalım. Sebzeleri pirinçlerin üzerine ekleyip salça, baharat nar ekşisi ve yağı ekleyip iyice karıştıralım. (yağ miktarı pirinçler parlak görünmesine bağlı) Sarma tenceresinin tabanına bir iki adet yaprak serip yaprakları saralım. Sarmaların üzerine tuzunu serpelim. Yağını gezdirelim. Nar ekşisini gezdirelim. Limonun kabuklarını soyup sarmanın üzerine dilimleyelim. Sarmaların üzerini iki parmak geçecek kadar sıcak su ekleyelim. Önce harlı ateşte kaynayınca en kısık ateşte sarmalarımızı yaklaşık 1 saat pişirelim. İyice dinlenen sarmaları ılık servis edelim. Afiyet Olsun…
