Omaç, genellikle ilkbahar ve yaz aylarında tüketilen hafif bir yemektir.
Omaç tarifinde taze Gaziantep peyniri bu konuda önemli rol oynadığı gibi sebzelerin de taze olması önemlidir. Omaç yemeğinde bayat ekmekler değerlendirilir.
Antep Peyniri: İlkbaharda yapılıp, salamura içinde tenekelerde saklanan beyaz renkli, topaç gibi bir peynirdir. Taze olarak da yenir veya suda bekletilip fazla tuzu alınarak kullanılır.
Leğençe: Hamur veya köfte yoğurmaya yarayan geniş kenarlı tepsi veya leğene benzer kap

Ekmekler küçük küçük parçalanıp bir tarafa konur. Maydanoz ince ince doğranır.
Kuru soğan ve sarımsak doğranıp bir tepsiye konur.
Domatesler yıkanıp ufak ufak doğranır ve tepsiye ilave edilir.
Antep peyniri de ince ince doğranıp tepsiye ilave edilir. Hazırlanan bu karışımların üzerine tereyağı, tuz, karabiber,domates ve biber salçası, kırmızı toz biber de eklenerek karıştırıldıktan sonra tepside iyice yoğrulur.
Son olarak doğranmış ekmek ve maydanoz da eklenip çok az daha yoğrularak sıkmalar haline getirilip servis yapılır.
