Bir Kahvenin 400 Yıllık Hatırı: “Menengiç Kahvesi”

Kavrulmuş ve çekilmiş Antep fıstığının tohumlarından yapılmaktadır. Antep fıstığının aşılanmamış ağacının meyvesi olan menengiç meyvesi kurutulup, kavrularak öğütülmesi ile menengiç kahvesi elde edilir.

Tohumlar sütle ya da suyla pişirilmekte ve uzunca bir süre kaynatılmaktadır. Ayrıca tohum yerine, menengiç ezilerek hazırlanan ve konservede hazır olarak satılan, sıvı kahve tercih edilmektedir. Bu sıvıya su ya da süt eklenip kaynatılarak “menengiç kahvesi” hazırlanmaktadır.

Bu kahve, Gaziantep ve çevresine sıkışmış bir içecektir. Fakat şifalı olduğu düşünüldüğü için özellikle kış aylarında Gaziantepliler bu içeceği evlerinde bulundurmakta boğaz ağrısı, öksürüğü ve soğuk algınlığını tedavi etmesi amacıyla kullanmaktadır.

Menengiç Nedir?

Sakız ağacı familyasından, Latince tür adı Pistacia terebinthus olan menengiç bitkisi, boyu en fazla 10 metreye kadar ulaşabilen ve yavaş büyüme özelliğine sahip bir bitkidir.

Yetiştirildiği farklı yörelere göre değişik isimler alan faydalı bitki, çitlenbik, çıtlık ve bıttım gibi isimleri ile de bilinmektedir. Her toprak yapısında yetişmeye elverişli bir bitki olsa da, kuru ve yumuşak topraklarda daha iyi gelişme gösterir. Kırmızımsı çiçeklenmenin ardından oluşan meyveler, olgun hallerinde yeşil ve mavi rengine dönüşürler.
